Protein Brownies (That Don’t Suck)

I’l be honest, most protein brownies taste like crap.  Well not these.  This is literally my mom’s recipe for high protein / low carb brownies that you can have any time for a snack or even a post workout protein blast.  Here’s how to make them…

* 1 heaping scoop Quest Chocolate Protein Powder (about 1/3 cup)

* 1/4 cup Rolled Oats (or oat flour)

* 2 T Coconut Oil

* 1 T Cocoa Powder (unsweetened)

* 1 Cup Water

Add protein powder, oats, and cocoa powder in a blender and mix until blended well.  Add Coconut Oil, and add water a little at a time until you reach the consistency of cake batter.

Pour mixture into a sprayed pan, bake for 12 minutes at 325 – then check the center of the brownies with a toothpick.  If it is still very wet, continue to bake for up to another 5 minutes.  Once the center is set  but not dry, remove from oven and let rest.  Once cooled, cut into portions of your liking, and refrigerate or freeze.

Note:  Don’t over bake! (cuz that will make it not good)

The entire pan will have 24g Protein and 12 Net Carbs.  Cut into whatever size you’d like!

PS:  The pan in the picture had 6 servings in it – so one scoop will require a very small pan!
