Love mom’s cookies? I thought so.
Love the fat and sugar (and guilt) that comes with eating them?
I thought not 🙂
Well this recipe comes directly form my mom (no kidding.) She knew that like me, my 2 young boys love cookies.
And like any good grandma she likes to bake them cookies but she also knows how we try to keep sugar out of the kids diets (at least most of the time.)
And my mom is quite clever in the kitchen and she really struck gold with this one.
Not only is the NO sugar in these cookies, but there is a a good dose of muscle building protein and nothing but heart healthy fats!
I know, you think that if they are healthy they probably tastes like card board. NOT TRUE!
(and how dare your doubt my moms cookies!)
They are the most unbelievably tasty cookies ever, even better than Mrs. Fields (no joke!) They are soft and cinnamony sweet truly awesome.
They are perfect for kids (of any size) and work great in lunches, afternoon snacks or even a healthy desert!
Here is the recipe my mom gave me to share with you….
Preheat oven to 375 degrees.
Cream together stevia and butter until light and fluffy. Add the egg, vanilla, baking powder and continue to mix. Add Quest Baking Mix a little at a time to the bowl, scraping the sides often, mixing until well blended.
Make golf-ball sized dough balls and place on a cookie sheet, about 2 inches apart. Flatten with a spatula (or the bottom of a small glass). Sprinkle additional cinnamon/stevia mixture on top.
Bake for about 8 minutes and check for doneness – once the bottoms are lightly browned, they’re done!
Let cool, and enjoy.
Nutritional Info per cookie:
Fat Grams 8
Carbs 0 .2
I hope you love them as much as me and my boys do!
